Recipe // Peony Margarita
Living with me is like a “Top Chef” challenge for Larsen, because I’m always asking him to turn some random melon or leftover container of juice into a fancy cocktail. Like, we have half a honeydew no one is going to eat, could you gussy it up with your magic potions & meet me on the porch in ten?
So the other day when Larsen brought home a watermelon the size of our five year-old, he probably knew a watermelon drank of one kind or another was in the cards. The lovechild of a Paloma & a watermelon margarita, the drink Larsen ultimately came up with is refreshing & well-balanced & the most divine shade of coral-y pink that matches my Trader Joe’s peonies so perfectly it’s like I planned it. (If only I were that good.)
PEONY MARGARITA
Serves 2
Watermelon chunks, 4 cups
Grapefruit juice, 2 ozs
Lime, 1 oz
Your favorite blanco tequila, 4 ozs
Simple syrup, 1/2 oz
Crushed ice
Place watermelon chunks in blender & blitz until fully blended. Strain through a fine mesh sieve into a measuring cup. Pat yourself on the back because you just made fresh watermelon juice!
Rim two double old-fashioned glasses with Red Clay Spicy Margarita Salt & fill to the brim with ice. Pour 4 ozs watermelon juice, grapefruit juice, lime juice, simple syrup & tequila into shaker with ice. Shake vigorously & strain into prepared glasses.
